In modern bread making, the proofing phase has assumed ever greater importance;
Having a professional proofing system, built according to certain criteria (insulation, air distribution, relative humidity, etc.) allows you to obtain numerous advantages and enhance the product.

Two possible configurations of use:

• CLIMATE PROOFING:
+ 8 °C | + 40°C r.h. 60-95%
The proofing phase is done with air conditioning, in order to allow a long-term natural process with progressive steps at adjustable times and temperatures.

• FINAL PROOFING:
+ 30 °C | + 40 °C u.r. 60-95%
The proofing phase is done with a single set of temperature, humidity and correct uniformity of the air to ensure the best result.
