The PLATINUM retarder prover are a project born from the need to offer the baker a machine that offers large varieties of use and capacities. The project has always evolved and perfected to always offer a machine that is always at the highest level.

Specific retarder proving function for each type of work:

• TCA
RETARDER + FINAL PROOFING:
-10 ° C | + 40 ° C  r.h. 60-95%

The TCA series is designed for the laboratory that wants the leavened bread ready for baking at a certain time and then uses the cell for the final proofing of another product.

• TTN
RETARDER + NATURAL LEAVENING:
-10 ° C | + 25 ° C  r.h. 60-80%

The TTN series is designed for those who organize production with the cooking phase distributed throughout the day; the doughs are gradually leavened at natural temperatures and kept for a long time. With this process, freshly baked bread is obtained at any time of the day.

• TBT
LOW TEMPERATURE RETARDER
-20 ° C | + 15 ° C  r.h. 60-80%

The TBT series is a low temperature retarder-proofer for special large-weight breads where it is necessary to completely block the bacterial load and then proceed with natural leavening.
